Easy Homemade Oatmeal and Banana Pancakes

I used to be the type of person that made “Just add water” pancakes from a box, until a friend of mine showed me her pancake recipe, made from scratch. And I have to tell you that making pancakes from scratch aren’t only better but it’s also more fun, because you get to experiment with your own ingredients. So in this blog post I will share with you my easy homemade oatmeal and banana pancakes(I got the original recipe from a friend, but I gave it my own spin).

Ingredients(for 8 small pancakes):

  • Oatmeal (2 cups)
  • Baking powder (1small sachet)
  • Unsweetened soy drink (2-3 cups, you can also choose coconut or almond drink)
  • Egg (1)
  • Bananas, sliced (1.5)
  • Vanilla extract (1 teaspoon)
  • Oil (your choice)

Toppings:

  • Honey, jam or your choice of syrup
  • 1 Banana

 

Obviously the quantity may vary depending on what you think you would need best. I personally don’t always measure my ingredients, because I usually pour the ingredients based on my feelings and personal taste. As they say, cooking is by feeling and not by measuring 😉

Mixing and cooking

Once all ingredients are in place, start slicing the banana’s into pieces. Then mix the sliced banana pieces together with the soy drink, oatmeal, baking powder and vanilla extract using a high-powered blender until you get a smooth consistency.

Fire up the pan and start cooking(using your choice of oil)!

Top off your pancakes with freshly sclided bananas and your syrup or jam of choice!  It’s that easy and so delicious.
